Ingredients

  • 1 lb flank steak, thinly sliced against the grain
  • 2 tbsp cornstarch
  • 12 oz lo mein noodles or spaghetti
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp hoisin sauce
  • 3 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 tsp sesame oil
  • ½ tsp red pepper flakes (optional)
  • ¼ cup water
  • 2 tbsp vegetable oil
  • 4 green onions, sliced

Method

  1. Toss the sliced beef with cornstarch until evenly coated. Let it sit while you make the sauce.
  2. Whisk together soy sauce, brown sugar, hoisin, garlic, ginger, sesame oil, red pepper flakes, and water. Set aside.
  3. Sear the beef in a hot skillet with oil, in batches, until browned and crisp at the edges. Transfer to a plate.
  4. Cook the noodles a minute shy of package directions, drain, then toss in the skillet with the sauce. Add the beef and half the green onions, toss until glossy, and serve topped with remaining onions.

Notes

If the sauce tightens up too much when you toss the noodles, add a tablespoon or two of water to loosen it again. The beef slices best when partially frozen, about 20 minutes in the freezer makes all the difference.
