Ingredients
  

  • 2 large eggs
  • 3/4 cup vegetable oil
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 2 cups shredded zucchini, lightly packed
  • 8 oz full-fat cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • pinch of salt
  • 1-2 tsp milk, if needed

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch pan. In a large bowl, whisk eggs, oil, granulated sugar, brown sugar, and 2 tsp vanilla until smooth.
  2. In a separate bowl, whisk flour, baking soda, baking powder, salt, and cinnamon. Stir into the wet mixture until just combined. Fold in the shredded zucchini.
  3. Spread the batter into the prepared pan and bake for 25 to 28 minutes, until a toothpick inserted in the center comes out clean. Cool completely in the pan.
  4. Beat the cream cheese and butter until smooth and fluffy. Gradually add powdered sugar, 1 tsp vanilla, and a pinch of salt, beating until creamy. Add milk if needed for spreading consistency.
  5. Spread the frosting over the cooled bars. Chill for 20 minutes if desired, then slice into 16 squares and serve.

Notes

If your shredded zucchini is very wet, squeeze it in a kitchen towel before adding it to the batter. For the neatest slices, chill the frosted bars briefly before cutting.
