- Make the streusel: stir flour, brown sugar, and cinnamon; cut in butter until crumbly; chill.
- Preheat oven to 375°F and line a 12-cup muffin tin. Whisk pumpkin, sugar, oil, eggs, and vanilla until smooth.
- Fold in flour, baking powder, baking soda, salt, and pumpkin pie spice until just combined.
- Divide batter into liners, top with streusel, and bake 18 to 20 minutes. Cool 5 minutes in pan, then transfer to a rack. Serve warm.
Notes
If you skip the streusel, brush the tops with a little milk and sprinkle with coarse sugar for a sparkling finish. The muffins are best the day they are baked, but stay moist for a couple of days stored airtight.
