Ingredients
  

  • 1/4 cup all-purpose flour
  • 2 tbsp packed light brown sugar
  • 2 tbsp cold unsalted butter, diced
  • 1/4 tsp ground cinnamon
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 1 cup pumpkin puree
  • 3/4 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract

Method
 

  1. Make the streusel: stir flour, brown sugar, and cinnamon; cut in butter until crumbly; chill.
  2. Preheat oven to 375°F and line a 12-cup muffin tin. Whisk pumpkin, sugar, oil, eggs, and vanilla until smooth.
  3. Fold in flour, baking powder, baking soda, salt, and pumpkin pie spice until just combined.
  4. Divide batter into liners, top with streusel, and bake 18 to 20 minutes. Cool 5 minutes in pan, then transfer to a rack. Serve warm.

Notes

If you skip the streusel, brush the tops with a little milk and sprinkle with coarse sugar for a sparkling finish. The muffins are best the day they are baked, but stay moist for a couple of days stored airtight.
