Moist Orange Cardamom Cake Recipe

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon fine salt
  • 1 1/2 teaspoons ground cardamom
  • 1 cup plain whole-milk yogurt
  • 3 large eggs
  • 2/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted and slightly cooled
  • Zest of 2 oranges
  • 1 tablespoon coarse sugar

Method
 

  1. Preheat oven to 350°F (175°C) and line a 9x5-inch loaf pan. Whisk yogurt, eggs, sugar, melted butter, and orange zest until smooth.
  2. In another bowl, whisk flour, baking powder, baking soda, salt, and cardamom.
  3. Fold dry ingredients into wet until just combined.
  4. Scrape batter into pan, smooth top, sprinkle with coarse sugar. Bake 50-55 minutes until a skewer comes out clean.
  5. Cool in pan 10 minutes, then lift out and cool completely on a rack before slicing.

Notes

The crackly sugar top is best within a day or two. If the crust softens in storage, a quick stint in a 300°F oven will revive it. Don’t slice the cake until it has fully cooled, or the crumb can compress.
