Ingredients
  

  • 3 medium ripe bananas, heavily spotted
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups gluten-free 1-to-1 baking flour
  • 1 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1 tsp ground cinnamon
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Method
 

  1. Preheat the oven to 350°F (175°C). Grease an 8.5 x 4.5-inch loaf pan and line with parchment. Mash the bananas in a large bowl until mostly smooth with small lumps.
  2. Add melted butter, sugar, eggs, and vanilla. Whisk until glossy and combined.
  3. Sprinkle the flour, baking soda, salt, and cinnamon over the wet mixture. Fold with a spatula until just combined. Fold in walnuts or chocolate chips if using.
  4. Pour batter into the pan, smooth the top, and bake 50 to 60 minutes until a toothpick inserted in the center comes out with a few moist crumbs. Cool in the pan 10 minutes, then transfer to a rack to cool completely.
  5. Slice with a serrated knife and serve warm or at room temperature.

Notes

The banana bread tastes even better the next day after the moisture settles. If your loaf pan is dark or glass, reduce the oven temperature to 325°F (165°C) and expect a slightly longer bake time. Let the loaf cool fully before slicing for the cleanest cut.
