Ingredients
  

  • 3 large very ripe bananas, mashed
  • 2 large eggs
  • ¼ cup melted coconut oil or unsalted butter
  • ¼ cup pure maple syrup
  • 1 tsp vanilla extract
  • 1¾ cups oat flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp fine sea salt
  • Optional ½ cup chopped walnuts, pecans, or dark chocolate chips

Method
 

  1. Mash the bananas in a large bowl until smooth.
  2. Whisk in the eggs, melted oil, maple syrup, and vanilla until combined.
  3. Fold in the oat flour, baking soda, cinnamon, and salt until just combined. Fold in nuts or chocolate, if using.
  4. Pour the batter into a greased 9x5-inch loaf pan and bake at 350°F for 50 to 55 minutes, until a toothpick comes out clean.
  5. Cool in the pan for 10 minutes, then turn out onto a rack to cool completely before slicing.

Notes

For the best texture, let the bread cool completely before slicing. If your bananas are extra large, you may need to add an extra 2 tablespoons of oat flour to keep the batter from being too wet.
