Moist Morning Glory Muffins Recipe

Ingredients
  

  • 1 ½ cups whole wheat flour
  • ½ cup all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • ½ teaspoon salt
  • 2 large eggs
  • ⅓ cup vegetable oil or melted coconut oil
  • ½ cup brown sugar, packed
  • ⅓ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple, well drained
  • 1 cup shredded carrot
  • 1 cup shredded apple
  • ½ cup unsweetened shredded coconut
  • ½ cup chopped pecans
  • ½ cup raisins

Method
 

  1. Preheat the oven to 375°F and line a 12-cup muffin tin. In a large bowl, whisk the whole wheat flour, all-purpose flour, baking soda, cinnamon, and salt until no lumps remain.
  2. In a separate bowl, whisk the eggs, oil, brown sugar, granulated sugar, and vanilla until smooth. Stir in the drained crushed pineapple.
  3. Pour the wet mixture over the dry and fold just until combined. Gently fold in the carrot, apple, coconut, pecans, and raisins until evenly mixed.
  4. Scoop the batter into the muffin cups, filling each about three-quarters full. Bake for 18 to 22 minutes, until a toothpick comes out clean and the tops are golden.
  5. Cool in the pan for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.

Notes

The muffins will keep at room temperature for a day or two, but for longer storage, refrigerate. Toasting the pecans before adding them is optional but brings out their flavor.
