Moist High-Protein Banana Bread Recipe

Ingredients
  

  • 1 cup mashed overripe banana (about 2 large)
  • ½ cup plain Greek yogurt
  • 2 large eggs
  • ⅓ cup maple syrup or honey
  • ¼ cup melted coconut oil or unsalted butter
  • 2 teaspoons vanilla extract
  • 1 cup oat flour
  • ½ cup vanilla or unflavored protein powder
  • 1 teaspoon baking soda
  • ½ teaspoon fine sea salt
  • 1 teaspoon ground cinnamon (optional)

Method
 

  1. Heat oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with parchment.
  2. In a large bowl, mash the banana. Whisk in yogurt, eggs, maple syrup, oil, and vanilla until smooth.
  3. In a separate bowl, whisk together oat flour, protein powder, baking soda, salt, and cinnamon.
  4. Pour dry into wet and fold just until no streaks remain. Do not overmix.
  5. Spread batter into the prepared pan and bake 50–55 minutes, until a toothpick comes out clean.
  6. Cool in the pan 10 minutes, lift out with parchment, then cool completely on a wire rack before slicing.

Notes

All protein powders behave a little differently. If your loaf comes out drier than expected after cooling, try a different brand or add 1 to 2 tablespoons more yogurt next time. For the most even slices, use a serrated bread knife.
