Ingredients
  

  • 3 large overripe bananas, mashed (about 1 ½ cups)
  • 2 large eggs, at room temperature
  • ⅓ cup neutral oil (avocado or vegetable)
  • ½ cup light brown sugar, packed
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • ⅔ cup vanilla or unflavored protein powder
  • 1 tsp baking soda
  • ½ tsp fine sea salt
  • Optional: ½ cup chopped walnuts or chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line a 9x5-inch loaf pan with parchment. Mash the bananas in a large bowl.
  2. Whisk in the eggs, oil, brown sugar, and vanilla until smooth.
  3. Sift the flour, protein powder, baking soda, and salt over the wet mixture. Fold with a spatula just until no streaks remain.
  4. Pour batter into the prepared pan and bake for 50–55 minutes, until a toothpick comes out clean.
  5. Cool in the pan for 10 minutes, then lift out and cool on a wire rack for 20 minutes. Slice and serve warm.

Notes

For the softest texture, use very ripe bananas with black peels. The loaf needs at least 20 minutes of cooling time to set properly before slicing. Store fully cooled bread wrapped tightly at room temperature for 2 days, or refrigerate for longer.
