Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup full-fat sour cream
  • 1 teaspoon vanilla extract
  • ⅓ cup brown sugar (for swirl)
  • 1 tablespoon ground cinnamon (for swirl)
  • ⅓ cup all-purpose flour (for streusel)
  • ⅓ cup brown sugar (for streusel)
  • ¼ teaspoon ground cinnamon (for streusel)
  • 3 tablespoons cold unsalted butter (for streusel)

Method
 

  1. Preheat oven to 350°F. Make cinnamon swirl: mix ⅓ cup brown sugar and 1 tbsp cinnamon. Make streusel: combine ⅓ cup flour, ⅓ cup brown sugar, ¼ tsp cinnamon; cut in 3 tbsp cold butter.
  2. Cream ½ cup butter and 1 cup sugar until fluffy. Beat in eggs one at a time, then vanilla.
  3. Whisk flour, baking powder, baking soda, salt. Alternate adding dry ingredients and 1 cup sour cream to butter mixture, beginning and ending with flour.
  4. Spread half of batter in greased 9x9 pan. Sprinkle with swirl, top with remaining batter and streusel. Bake 45-50 min until toothpick has moist crumbs. Cool 15 min in pan.
  5. Remove from pan, slice into 9 squares, and serve.

Notes

For the best texture, use full-fat sour cream and avoid overmixing the batter. The cake tastes even better the next day.
