Ingredients
  

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup hot coffee
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup heavy cream
  • 2 teaspoons vanilla extract
  • pinch of salt

Method
 

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans. Whisk together flour, sugar, cocoa, baking soda, baking powder, and salt in a large bowl.
  2. In another bowl, whisk eggs, buttermilk, oil, and vanilla. Pour in hot coffee while stirring, the batter will be thin.
  3. Divide batter evenly between pans. Bake 30-35 minutes until a toothpick comes out clean. Cool completely.
  4. Beat butter until fluffy, then gradually add powdered sugar, cream, vanilla, and salt. Beat on high for 2-3 minutes. Frost the cake layers and stack.

Notes

For the fluffiest frosting, beat on high speed for a full 3 minutes after adding the cream. The cake layers can be baked a day ahead, wrapped tightly, and stored at room temperature before frosting.
