- Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans. Whisk together flour, sugar, cocoa, baking soda, baking powder, and salt in a large bowl.
- In another bowl, whisk eggs, buttermilk, oil, and vanilla. Pour in hot coffee while stirring, the batter will be thin.
- Divide batter evenly between pans. Bake 30-35 minutes until a toothpick comes out clean. Cool completely.
- Beat butter until fluffy, then gradually add powdered sugar, cream, vanilla, and salt. Beat on high for 2-3 minutes. Frost the cake layers and stack.
Notes
For the fluffiest frosting, beat on high speed for a full 3 minutes after adding the cream. The cake layers can be baked a day ahead, wrapped tightly, and stored at room temperature before frosting.
