- Heat oven to 350°F (175°C), grease two 9-inch round pans, and line with parchment. Whisk flour, sugar, cocoa, baking powder, baking soda, and salt in a large bowl.
- Add eggs, milk, oil, and vanilla to the dry ingredients. Beat for 2 minutes until smooth and thick.
- Slowly stir in the hot coffee until the batter is thin and silky, then scrape down the bowl.
- Divide batter evenly between pans and bake for 30 to 35 minutes, until a toothpick comes out with moist crumbs.
- Cool in pans for 10 minutes, then invert onto a rack to cool completely. Slice and serve.
Notes
The cake tastes even better the next day as the chocolate flavor settles. You can make it a day ahead and wrap it well at room temperature. If frosting, wait until the layers are fully cool to keep the frosting from melting.
