Mock Apple Pie with Ritz Crackers Recipe

Ingredients
  

  • 2 1/2 cups all-purpose flour, plus more for rolling
  • 1 teaspoon salt
  • 1 cup cold unsalted butter, cubed
  • 4 to 6 tablespoons ice water
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups water
  • 2 teaspoons cream of tartar
  • 1/4 cup fresh lemon juice
  • 2 teaspoons grated lemon zest
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 36 Ritz crackers (about 2 sleeves), coarsely broken
  • 2 tablespoons unsalted butter, cut into small pieces

Method
 

  1. Make the dough: cut butter into flour and salt, add ice water to form a dough, divide into two disks, and chill.
  2. Boil sugar, water, and cream of tartar for 10 minutes; stir in lemon juice, zest, cinnamon, and nutmeg, then let cool.
  3. Roll one dough disk to a 12-inch circle and fit into a 9-inch pie plate. Layer half the crackers, half the syrup, the rest of the crackers, and remaining syrup. Dot with butter.
  4. Roll out the second dough disk, top the pie, trim and crimp edges, and cut steam vents.
  5. Preheat oven to 425°F (220°C) with a baking sheet on the lower rack. Bake pie for 15 minutes, reduce heat to 375°F (190°C) and bake 30 to 35 minutes until golden. Cool at least 1 hour before slicing.

Notes

You can use a 2-count box of refrigerated pie crusts to skip the from-scratch dough. The pie needs a full hour of cooling to set the filling properly. Leftovers hold well covered in the fridge.
