Miso Salmon Noodle Bowl Recipe

Ingredients
  

  • 4 (6 oz) salmon fillets
  • 3 tbsp white miso paste
  • 2 tbsp mirin
  • 1 tbsp soy sauce
  • 2 tsp sugar
  • 1 tsp grated fresh ginger
  • 8 oz soba noodles
  • 1 cup frozen shelled edamame, thawed
  • 1 large carrot
  • 1 small cucumber
  • 2 scallions
  • 1 tbsp toasted sesame seeds

Method
 

  1. Preheat broiler and position rack 6 inches from heat. Mix miso, mirin, soy sauce, sugar, and ginger. Place salmon on a foil-lined baking sheet, brush with all the glaze, and broil 4-5 minutes until caramelized and cooked through.
  2. Cook soba noodles in boiling water according to package directions, about 4 minutes. Drain, rinse under cold water, and divide among 4 bowls.
  3. Use a peeler to make carrot ribbons, slice cucumber into thin half-moons, slice scallions, and toss carrot with edamame.
  4. Place a salmon fillet on each noodle bowl, pile the carrot-edamame mix and cucumber to the side, and top with scallions and sesame seeds. Serve immediately.

Notes

If your broiler pulls away from the glaze too fast, lower the rack one notch. The salmon carries over a little heat, so pull it when you just see flaking at the edge.
