- Heat a large pot over medium-high heat, crumble in the beef, and cook until browned, about 5 minutes. Stir in garlic and ginger and cook 30 seconds.
- Pour in the broth, whisk in miso and soy sauce, bring to a boil, then simmer 10 minutes. Stir in sesame oil.
- Meanwhile, boil a separate pot of water, cook noodles according to package, drain, and divide between bowls.
- Ladle broth and beef over noodles, top with halved soft-boiled egg, green onions, sesame seeds, and nori. Serve immediately.
Notes
Soft boil the eggs ahead of time: place room-temperature eggs in boiling water for 6½ minutes, then transfer to ice water to stop the cooking. The broth freezes well, but keep it separate from noodles so the texture stays right.
