Miso Beef Ramen Recipe

Ingredients
  

  • 1 lb ground beef
  • 4 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 3 tbsp white miso paste
  • 2 tbsp soy sauce
  • 4 cups beef broth
  • 1 tsp sesame oil
  • 8 oz fresh ramen noodles (or 2 packages instant ramen, discard seasoning packet)
  • Toppings: soft boiled eggs, sliced green onions, toasted sesame seeds, nori sheets

Method
 

  1. Heat a large pot over medium-high heat, crumble in the beef, and cook until browned, about 5 minutes. Stir in garlic and ginger and cook 30 seconds.
  2. Pour in the broth, whisk in miso and soy sauce, bring to a boil, then simmer 10 minutes. Stir in sesame oil.
  3. Meanwhile, boil a separate pot of water, cook noodles according to package, drain, and divide between bowls.
  4. Ladle broth and beef over noodles, top with halved soft-boiled egg, green onions, sesame seeds, and nori. Serve immediately.

Notes

Soft boil the eggs ahead of time: place room-temperature eggs in boiling water for 6½ minutes, then transfer to ice water to stop the cooking. The broth freezes well, but keep it separate from noodles so the texture stays right.
