- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment. Beat the butter, granulated sugar, and brown sugar until light and fluffy, about 3 minutes.
- Mix in the egg, mint extract, and vanilla on low speed until just combined. Add green food coloring now if using.
- Whisk the flour, baking soda, and salt together, then stir into the wet ingredients on low speed until a few streaks remain. Finish mixing with a spatula.
- Fold in the chocolate chips until evenly distributed. If the dough is sticky, chill it for 10 minutes.
- Drop rounded tablespoonfuls of dough onto the sheets, spacing 2 inches apart. Bake one sheet at a time for 10 to 12 minutes, until edges are set and centers look slightly underdone.
- Let the cookies rest on the sheet for 2 minutes, then transfer to a wire rack. Serve warm or cooled.
Notes
For soft, chewy cookies, pull them from the oven when the centers still look a little wet; they'll set up as they cool. If you prefer crisp cookies, bake a minute longer. The dough can be made and refrigerated for up to 24 hours before baking, straight from the fridge with no change in texture.
