Ingredients
  

  • 1 lb ground beef (85/15)
  • 1 packet (2 tbsp) taco seasoning
  • 1/2 cup water
  • 24 wonton wrappers
  • 1 cup shredded Mexican blend cheese or sharp cheddar
  • Shredded lettuce, diced tomatoes, sour cream, salsa, pickled jalapeños, for serving

Method
 

  1. Brown the ground beef in a skillet over medium heat for about 6 minutes. Drain fat, then stir in the taco seasoning and water and simmer for 3 to 4 minutes until reduced.
  2. Heat oven to 375°F (190°C). Lightly grease a 24-cup mini muffin tin and press a wonton wrapper into each cup. Bake the empty wrappers for 4 to 5 minutes until edges are light gold.
  3. Spoon the beef mixture into the pre-baked cups, filling them about two thirds full. Top each with a pinch of cheese. Bake for 8 to 10 minutes until the cheese is bubbly and wrappers are deep golden.
  4. Let the cups cool in the pan for 2 minutes, then lift them out and arrange on a platter. Serve with bowls of lettuce, tomatoes, sour cream, salsa, and jalapeños for topping.

Notes

The pre-bake step is what keeps these cups crackly even under the filling, so do not skip it. If you want extra insurance against sogginess, you can brush the wrappers lightly with oil before the first bake.
