Ingredients

  • 1 cup all-purpose flour (125g)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened (113g)
  • 1/2 cup granulated sugar (100g)
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1/3 cup whole milk, room temperature (80ml)
  • 1/4 cup unsalted butter, softened (57g)
  • 3/4 cup powdered sugar (90g)
  • 1 tsp vanilla extract
  • 1 to 2 tbsp heavy cream or milk
  • Black gel food coloring

Method

  1. Preheat oven to 350°F (175°C). Grease a 4-inch round or square pan. Whisk flour, baking powder, and salt. In another bowl, cream the 1/2 cup butter and granulated sugar until fluffy, then beat in egg and 1 tsp vanilla. Alternately add dry ingredients and milk, mixing until just combined. Pour into pan.
  2. Bake 20 to 22 minutes until a toothpick comes out clean. Cool in pan 10 minutes, then turn onto a wire rack to cool completely.
  3. For buttercream, beat the 1/4 cup butter until smooth, gradually add powdered sugar, then 1 tsp vanilla and 1 tbsp cream. Beat until fluffy. Reserve 3 tbsp and tint black with gel coloring.
  4. Level the cake top, split horizontally. Fill with white buttercream, apply a thin crumb coat, and chill 15 minutes.
  5. Spread final white buttercream layer. With black buttercream in a piping bag with a small round tip, pipe Snoopy’s nose, eyes, smile, and collar.
  6. Place cake in bento box or on a plate. Serve at room temperature.

Notes

Cooling and chilling time is not counted in the prep and cook times; plan for an extra 30 minutes. If doubling the recipe for a 6-inch pan, bake for 25 to 28 minutes. Use gel food coloring for the black details to keep the buttercream thick and vivid.
