Mini Skillet Cookie Recipe

Ingredients
  

  • 2 tbsp unsalted butter, melted and slightly cooled
  • 2 tbsp packed light brown sugar
  • 1 tbsp granulated sugar
  • 1 large egg yolk
  • ¼ tsp vanilla extract
  • ¼ cup (30g) all-purpose flour
  • ⅛ tsp baking soda
  • pinch of fine sea salt
  • 3 tbsp semi-sweet chocolate chips, plus extra for topping

Method
 

  1. Preheat the oven to 350°F (175°C). In a small bowl, whisk melted butter with both sugars until smooth. Add egg yolk and vanilla, then stir in flour, baking soda, and salt. Fold in chocolate chips.
  2. Lightly grease a 6-inch cast iron skillet. Scrape in the dough and press it into an even layer with the back of a spoon.
  3. Bake for 12 to 14 minutes, until edges are golden and the center looks slightly underdone.
  4. Remove from the oven. Press extra chocolate chips into the hot cookie, add a scoop of ice cream if you like, and serve right away.

Notes

This cookie tastes best eaten warm from the skillet within a few minutes of baking. If you want to get ahead, mix the dough and refrigerate it overnight in the skillet, then bake straight from the fridge and add 1 to 2 minutes to the bake time.
