Ingredients
  

  • 1 cup all-purpose flour
  • 1 tablespoon unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon fine sea salt
  • ¼ cup unsalted butter, softened
  • ½ cup granulated sugar
  • 1 large egg, at room temperature
  • 1 tablespoon red gel food coloring
  • 1 teaspoon vanilla extract
  • ½ cup buttermilk, at room temperature
  • ½ teaspoon distilled white vinegar
  • 4 oz cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 1 cup powdered sugar, sifted
  • ½ teaspoon vanilla extract

Method
 

  1. Whisk together flour, cocoa, baking soda, and salt in a small bowl.
  2. Beat butter and sugar 2 minutes until pale. Add egg, food coloring, and vanilla; beat until combined. On low, add dry mixture alternately with buttermilk in three additions, starting and ending with dry. Stir in vinegar by hand until just smooth.
  3. Preheat oven to 350°F (175°C). Grease two 4-inch round pans and line with parchment. Divide batter evenly between pans. Bake 18 to 22 minutes, until a toothpick comes out clean. Cool 10 minutes in pans, then turn onto a rack to cool completely.
  4. Beat cream cheese and butter until smooth. Add powdered sugar and vanilla, beat on low to combine, then whip on medium until fluffy, 1 to 2 minutes.
  5. Place one cake layer on a serving plate, spread about 3 tablespoons frosting on top. Add second layer. Apply a thin crumb coat all over, chill 15 minutes. Frost with remaining frosting, smoothing the sides.
  6. Pipe rosettes or a border if you like, scatter on sprinkles or crumbs, and serve.

Notes

Cool the layers completely before frosting, or the cream cheese will slide. If you do not have buttermilk, stir 1½ teaspoons lemon juice or white vinegar into ½ cup whole milk and let it sit 5 minutes. The assembled cake tastes best the day it is made but keeps well chilled.
