- Mix flour, powdered sugar, and salt. Cut in cold butter until crumbly, then stir in egg yolk until dough forms.
- Press dough into 12 greased muffin cups, chill briefly, and par-bake at 350°F for 8 minutes until edges are golden.
- Whisk brown sugar, corn syrup, melted butter, egg, vanilla, and salt; stir in chopped pecans.
- Spoon filling into crusts, top each with a pecan half, and bake 15-18 minutes until puffed and nearly set.
- Cool in the tin for 10 minutes, then loosen and transfer to a rack to cool completely.
Notes
If you are short on time, use a refrigerated pie crust rolled out and cut into 3-inch circles to line the muffin cups. The pies will slice cleanest once fully cooled, so let them rest at least 20 minutes before serving.
