Mini Pecan Pies Recipe

Ingredients
  

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg yolk
  • 1/2 cup packed light brown sugar
  • 1/4 cup light corn syrup
  • 2 tbsp unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 3/4 cup chopped pecans
  • 12 pecan halves, for topping

Method
 

  1. Mix flour, powdered sugar, and salt. Cut in cold butter until crumbly, then stir in egg yolk until dough forms.
  2. Press dough into 12 greased muffin cups, chill briefly, and par-bake at 350°F for 8 minutes until edges are golden.
  3. Whisk brown sugar, corn syrup, melted butter, egg, vanilla, and salt; stir in chopped pecans.
  4. Spoon filling into crusts, top each with a pecan half, and bake 15-18 minutes until puffed and nearly set.
  5. Cool in the tin for 10 minutes, then loosen and transfer to a rack to cool completely.

Notes

If you are short on time, use a refrigerated pie crust rolled out and cut into 3-inch circles to line the muffin cups. The pies will slice cleanest once fully cooled, so let them rest at least 20 minutes before serving.
