- Preheat oven to 375°F and line a 24-cup mini muffin tin. In a large bowl, whisk the 1 1/2 cups flour, sugar, baking powder, and salt.
- In a separate bowl, whisk the buttermilk, egg, oil, and vanilla until smooth.
- Toss blueberries with the extra tablespoon of flour. Pour wet mixture into dry, add blueberries, and fold just until no dry flour remains.
- Scoop batter into tin, filling cups 3/4 full. Bake 10 to 12 minutes until tops spring back and a toothpick comes out clean. Cool in pan 5 minutes, then remove and serve warm.
Notes
If you use paper liners, peel them while the muffins are still gently warm; the berry juice can cause sticking as they cool. Greased tins without liners release a little easier for mini muffins.
