Ingredients
  

  • 2/3 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 3/4 tsp baking powder
  • 1/8 tsp fine salt
  • 1 large egg
  • 1/4 cup whole milk
  • 3 tbsp unsalted butter, melted and cooled slightly
  • 1/2 tsp vanilla extract
  • 1/2 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 tbsp whole milk
  • 1/2 tsp vanilla extract
  • Pink gel food coloring
  • Rainbow sprinkles
  • 1 Barbie doll pick

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 4-inch round pan, line bottom with parchment. Whisk flour, sugar, baking powder, and salt. Add egg, 1/4 cup milk, melted butter, and 1/2 tsp vanilla; whisk until smooth.
  2. Pour batter into pan, spread evenly. Bake 20-24 minutes until a toothpick comes out clean. Cool in pan 5 minutes, then turn onto a rack to cool completely.
  3. Beat the 1/2 cup softened butter until creamy. Gradually add powdered sugar, then 1 tbsp milk, 1/2 tsp vanilla, and a dab of pink gel coloring. Beat until fluffy.
  4. Slice cooled cake horizontally into two layers. Spread a thick layer of buttercream on the bottom layer, top with the second layer. Apply a thin crumb coat all over and chill 15 minutes.
  5. Frost the cake smoothly with the remaining buttercream. Press sprinkles around the bottom edge, insert the Barbie doll pick on top, and serve.

Notes

Cool the cake fully before frosting, warm cake will melt the buttercream. If you want the frosting to hold its shape in a warm room, keep the cake refrigerated until just before serving.
