Method
- Mix the diced apples with sugar, flour, cinnamon, nutmeg, and salt. Let sit 5 minutes.
- Unroll pie crusts on a floured surface and cut 12 four-inch circles.
- Press one circle into each cup of a muffin tin, fill with about 2 tbsp apple mixture, dot with butter, and top with a second circle. Seal edges and cut a steam vent.
- Preheat oven to 375°F (190°C). Brush tops with egg wash, sprinkle with coarse sugar, and bake 20 to 22 minutes until deep golden.
- Cool in pan 5 minutes, loosen edges with a knife, and lift pies out. Serve warm.
Notes
Let the pies rest in the pan for at least 5 minutes before removing them so the filling sets a little. If you lift them out too soon, they may fall apart. The pies can be assembled an hour ahead and chilled in the pan; bake straight from the fridge, adding 1 to 2 minutes.
