Mini Apple Pies Recipe

Ingredients
  

  • 1 box (14 oz) refrigerated pie crusts (2 crusts), softened according to package directions
  • 3 medium apples (about 1 lb), peeled, cored, and diced small
  • 1/4 cup granulated sugar
  • 2 tbsp all-purpose flour, plus more for dusting
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • Pinch of salt
  • 1 tbsp unsalted butter, cut into tiny cubes
  • 1 large egg beaten with 1 tbsp water (egg wash)
  • Coarse sugar, for sprinkling (optional)

Method
 

  1. Mix the diced apples with sugar, flour, cinnamon, nutmeg, and salt. Let sit 5 minutes.
  2. Unroll pie crusts on a floured surface and cut 12 four-inch circles.
  3. Press one circle into each cup of a muffin tin, fill with about 2 tbsp apple mixture, dot with butter, and top with a second circle. Seal edges and cut a steam vent.
  4. Preheat oven to 375°F (190°C). Brush tops with egg wash, sprinkle with coarse sugar, and bake 20 to 22 minutes until deep golden.
  5. Cool in pan 5 minutes, loosen edges with a knife, and lift pies out. Serve warm.

Notes

Let the pies rest in the pan for at least 5 minutes before removing them so the filling sets a little. If you lift them out too soon, they may fall apart. The pies can be assembled an hour ahead and chilled in the pan; bake straight from the fridge, adding 1 to 2 minutes.
