Mexican Tortilla Casserole Recipe

Ingredients
  

  • 1 lb ground beef (85/15)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning
  • ½ cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 2 cups red enchilada sauce
  • 8 small corn tortillas (6-inch)
  • 2 cups shredded Mexican blend cheese
  • salt to taste
  • Optional toppings: sour cream, avocado, cilantro, lime wedges

Method
 

  1. In a large skillet over medium-high heat, cook the ground beef, onion, and garlic until browned, about 5-7 minutes. Drain any excess fat.
  2. Stir in the taco seasoning, ½ cup water, black beans, and corn. Simmer 2-3 minutes, then taste and add salt if needed.
  3. Spread ¼ cup enchilada sauce in an 8x8-inch baking dish. Arrange 4 tortillas, then half the beef mixture, 1 cup cheese, and ½ cup sauce. Repeat layers with remaining tortillas, beef, cheese, and sauce.
  4. Bake at 375°F for 23 minutes, then broil 1-2 minutes until golden and bubbly.
  5. Let rest 5 minutes, then slice into squares and serve with toppings.

Notes

You can assemble the casserole a day ahead and refrigerate it unbaked; add 5-10 minutes to the bake time. For a vegetarian version, omit the beef and double the beans, or use a meat substitute.
