Mexican Stuffed Sweet Potatoes with Black Beans & Corn Recipe

Ingredients
  

  • 4 medium sweet potatoes (about 8 oz each)
  • 2 tablespoons olive oil, divided
  • 1 teaspoon kosher salt, plus more for potatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen thawed, or canned drained)
  • 1/2 small red onion, diced (about 1/2 cup)
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Juice of 1 lime (about 2 tablespoons)
  • 1/2 cup crumbled cotija cheese or queso fresco (optional)
  • 1 ripe avocado, sliced
  • 1/4 cup fresh cilantro leaves
  • Lime wedges for serving

Method
 

  1. Preheat the oven to 400°F (200°C). Scrub the sweet potatoes, prick them all over with a fork, and rub with 1 tablespoon of the olive oil and a generous pinch of salt. Place directly on the oven rack, with a baking sheet on the rack below to catch drips. Bake for 45 to 55 minutes, until a skewer slides through without resistance.
  2. While the potatoes bake, heat the remaining 1 tablespoon olive oil in a skillet over medium heat. Add the diced red onion and cook, stirring, until softened, about 4 minutes. Stir in the garlic, cumin, chili powder, and smoked paprika and cook 30 seconds. Add the black beans, corn, and a pinch of salt. Cook until warmed through, about 5 minutes. Off the heat, stir in the lime juice.
  3. Cut a slit down the center of each baked potato. Push the ends to open it, fluff the flesh with a fork, and season with a tiny pinch of salt. Divide the black bean filling among the potatoes.
  4. Top with cotija cheese, if using, then add avocado slices and cilantro. Serve with lime wedges.

Notes

The filling can be made up to 2 days ahead and reheated gently before stuffing. If the potatoes finish baking before the filling is ready, keep them warm in a low oven.
