Method
- Brown the ground beef in a large skillet over medium-high heat for 5–6 minutes. Drain excess fat if needed.
- Lower heat to medium. Add onion and bell pepper; cook 4 minutes until softened. Stir in garlic and cook 30 seconds.
- Add rice, chili powder, cumin, and smoked paprika. Toast for 1 minute, stirring.
- Add black beans, corn, tomatoes, broth, salt, and pepper. Bring to a boil, then cover and simmer on low until rice is tender, 18–20 minutes.
- Remove from heat. Top with cheese, cover 2 minutes to melt. Squeeze lime over top, garnish with cilantro, and serve.
Notes
Long-grain white rice gives the best texture here; see the timing table above if you are using a different rice. For a deeper, almost nutty flavor, toast the rice until it is lightly golden before adding the liquids.
