Mexican Shrimp Tostadas Recipe

Ingredients
  

  • 8 tostada shells
  • 1 lb medium shrimp, peeled and deveined
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 2 tbsp vegetable oil
  • 2 limes, juiced (about 4 tbsp)
  • 1 ripe avocado
  • 1/4 cup sour cream
  • 1/4 cup packed fresh cilantro leaves
  • 1 jalapeño, stemmed and seeded
  • 1/4 tsp salt
  • 2 cups shredded green cabbage
  • 1/4 cup finely chopped red onion
  • 1/2 cup crumbled queso fresco or cotija cheese
  • Pickled jalapeño slices (optional)
  • Hot sauce (optional)

Method
 

  1. Blend the avocado, sour cream, cilantro, jalapeño, 2 tbsp lime juice, and 1/4 tsp salt until smooth. Set aside.
  2. Toss the cabbage, red onion, 2 tbsp lime juice, and a pinch of salt. Massage for 30 seconds and let it sit.
  3. Pat shrimp dry, then toss with chili powder, cumin, garlic powder, and 1/2 tsp salt. Sear in hot oil over medium-high heat for 2 minutes per side, then finish with the juice of 1 lime.
  4. Warm tostada shells in a 350°F oven for 3 to 4 minutes.
  5. Spread crema on each shell, top with slaw and shrimp, and finish with cheese, pickled jalapeños, and extra lime. Serve immediately.

Notes

Assemble the tostadas just before eating so the shells stay crunchy. All the components can be made ahead and stored separately; just reheat the shrimp quickly and build when you’re ready.
