Mexican Shrimp Aguachile Recipe

Ingredients
  

  • 1 lb large shrimp, peeled and deveined
  • 1 cup fresh lime juice (about 6-8 limes)
  • 2-3 serrano chiles
  • 1 cup packed fresh cilantro leaves and tender stems
  • 1/2 small red onion, very thinly sliced
  • 1/2 English cucumber, halved lengthwise and thinly sliced
  • 1 tsp soy sauce or tamari (optional)
  • 1/2 tsp kosher salt

Method
 

  1. Butterfly the shrimp and season with 1/4 tsp salt; arrange in a single layer on a plate.
  2. Blend lime juice, serranos, cilantro, soy sauce (if using), and remaining 1/4 tsp salt until smooth.
  3. Pour the sauce over the shrimp, toss gently, and let sit until opaque, 10 to 15 minutes.
  4. Top with sliced cucumber and red onion; serve immediately.

Notes

The shrimp needs 10 to 15 minutes of marinating time in the lime juice. Start checking at the 10-minute mark; they should be opaque and firm, not gray. This dish is best eaten right away.
