Ingredients
  

  • 1 (14-oz) can fire-roasted diced tomatoes
  • 1/2 white onion, roughly chopped
  • 2 garlic cloves, peeled
  • 1 jalapeño, seeds removed for mild heat
  • 1/2 cup fresh cilantro, leaves and tender stems
  • Juice of 1 lime
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cumin

Method
 

  1. Place the onion, garlic, jalapeño, tomatoes with their juices, cilantro, lime juice, salt, and cumin in a blender.
  2. Pulse a few times, then blend on low to your desired consistency, about 10 to 15 seconds.
  3. Taste and adjust salt or lime. Pour into a bowl and serve.

Notes

For the best flavor, let the salsa sit for 10 minutes before serving so the garlic and cumin meld. If using fresh tomatoes, roast them first to get that smoky depth.
