Mexican Quinoa Bowl Recipe

Ingredients
  

  • 1 cup dry quinoa, rinsed
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup cherry tomatoes, halved
  • ¼ cup finely chopped red onion
  • 1 medium ripe avocado, sliced
  • ¼ cup fresh cilantro leaves
  • ¼ cup fresh lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon fine sea salt

Method
 

  1. Bring the quinoa and 2 cups of water to a boil in a saucepan. Cover, reduce heat to low, and simmer for 15 minutes. Remove from heat and let stand covered 5 minutes, then fluff with a fork.
  2. In a small bowl, whisk the lime juice, olive oil, cumin, garlic powder, and salt until combined.
  3. In a large bowl, toss the black beans, corn, tomatoes, and red onion with half of the dressing.
  4. Divide the quinoa among bowls, top with the bean mixture, avocado slices, and cilantro, then drizzle with the remaining dressing.

Notes

For meal prep, store the quinoa, bean mixture, and dressing separately. Add avocado and cilantro just before serving so they stay fresh.
