Mexican Queso Dip Recipe

Ingredients
  

  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 cup whole milk, warmed
  • 4 oz sharp cheddar cheese, shredded
  • 4 oz pepper jack cheese, shredded
  • 1/4 cup chopped pickled jalapeños, plus 1 tsp brine
  • Pinch of kosher salt

Method
 

  1. Melt the butter in a medium saucepan over medium heat. Whisk in the flour and cook, stirring constantly, for 1 minute until bubbly.
  2. Slowly pour in the warm milk, whisking until smooth. Cook for about 2 minutes until the sauce thickens and coats a spoon. Remove from heat, then stir in the shredded cheeses one handful at a time until completely melted and glossy.
  3. Stir in most of the jalapeños, the brine, and a pinch of salt. Transfer to a serving bowl, top with the remaining jalapeños, and serve immediately with tortilla chips.

Notes

The queso will thicken as it cools, so it’s best served right away. If you’ve got leftovers, reheat them gently with a splash of milk to bring back the creamy texture.
