Mexican Mosaic Jello Dessert Recipe

Ingredients
  

  • 4 boxes (3 oz each) flavored gelatin, in four colors
  • boiling water and cold water, as directed on boxes (about 4 cups each)
  • 2 envelopes (about 2 tbsp) unflavored gelatin
  • 1/2 cup cold water
  • 1/2 cup boiling water
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 1 teaspoon vanilla extract

Method
 

  1. Prepare each flavored gelatin in a separate dish with the boiling and cold water called for on the box. Chill until completely firm, about 4 hours, then cut into small cubes.
  2. Sprinkle unflavored gelatin over 1/2 cup cold water and let it bloom for 5 minutes.
  3. Pour 1/2 cup boiling water over the bloomed gelatin, stir to dissolve, then whisk in sweetened condensed milk, evaporated milk, and vanilla until smooth.
  4. Lightly oil a 10-cup mold. Toss the colored cubes together and scatter them into the mold, then slowly pour the milk mixture over them. Refrigerate until fully set, at least 6 hours.
  5. Dip the mold in warm water for 10-15 seconds, invert onto a plate, and slice to serve.

Notes

The chilling time is not counted in the prep or cook time; plan on starting this dessert the day before you need it so the layers set fully. A bundt pan or any deep mold with a center tube gives the most dramatic slices.
