Ingredients
  

  • 8 beef hot dogs
  • 8 slices thin-cut bacon
  • 8 hot dog buns
  • 1 large ripe tomato
  • ½ small white onion
  • 1 jalapeño (optional)
  • Handful fresh cilantro
  • 1 lime
  • 1 avocado
  • ½ cup Mexican crema or sour cream
  • Kosher salt

Method
 

  1. Wrap each hot dog tightly with a slice of bacon, securing with toothpicks if needed.
  2. Sear the wrapped hot dogs in a dry skillet over medium heat for 8 to 10 minutes, turning until the bacon is crisp all over.
  3. Toast the buns cut-side down in a dry skillet for 1 to 2 minutes. Dice the tomato, onion, and jalapeño; toss with cilantro, lime juice, and salt to make pico.
  4. Remove toothpicks. Place hot dogs in buns, add avocado slices, spoon over pico, drizzle with crema, and serve immediately.

Notes

This recipe is best the moment it’s assembled, so time the pico and avocado right before serving. If your bacon is browning too fast, lower the heat and turn the dogs more frequently. Any extra pico keeps well in the fridge for a day and works over scrambled eggs the next morning.
