Method
- Preheat grill to medium-high (400°F). Whisk lime juice, oil, garlic, chili powder, cumin, smoked paprika, oregano, salt, and pepper in a bowl.
- Add chicken thighs to a bag or dish; pour marinade over, turn to coat, and refrigerate 15 minutes to 4 hours.
- Grill chicken over direct heat for 5 to 6 minutes per side, until charred and internal temperature reaches 165°F.
- Rest 5 minutes, slice against the grain, and serve.
Notes
For the deepest flavor, marinate for at least 2 hours. Do not exceed 8 hours, as the lime juice can make the texture mushy. The chicken is also excellent grilled on a stovetop grill pan over high heat.
