Ingredients
  

  • 2 lbs boneless, skinless chicken thighs
  • 1/4 cup fresh lime juice
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat grill to medium-high (400°F). Whisk lime juice, oil, garlic, chili powder, cumin, smoked paprika, oregano, salt, and pepper in a bowl.
  2. Add chicken thighs to a bag or dish; pour marinade over, turn to coat, and refrigerate 15 minutes to 4 hours.
  3. Grill chicken over direct heat for 5 to 6 minutes per side, until charred and internal temperature reaches 165°F.
  4. Rest 5 minutes, slice against the grain, and serve.

Notes

For the deepest flavor, marinate for at least 2 hours. Do not exceed 8 hours, as the lime juice can make the texture mushy. The chicken is also excellent grilled on a stovetop grill pan over high heat.
