Method
- Mix all the dried spices and salt together, then coat the chicken with the spice blend, olive oil, and lime juice.
- Heat a cast‑iron skillet over high heat and sear the chicken for 5‑6 minutes per side until charred and cooked through to 165°F.
- Rest the chicken for 5 minutes, then slice it against the grain into bite‑size pieces.
- Warm the tortillas, fill with chicken, and top with onion, cilantro, salsa, sour cream, and avocado. Serve immediately with lime wedges.
Notes
A cast‑iron skillet gives the best char, but any heavy pan works if you keep the heat high. The same spice rub is excellent on shrimp or pork if you want to switch proteins.
