Mexican Casserole with Beef Recipe

Ingredients
  

  • 1 lb ground beef
  • 1 small yellow onion, diced
  • 2 garlic cloves, minced
  • 2 tbsp taco seasoning
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 1 ½ cups red enchilada sauce
  • 8 to 10 small corn tortillas (6-inch)
  • 2 cups shredded Mexican‑blend cheese
  • Sour cream, sliced avocado, and chopped cilantro, for serving

Method
 

  1. Preheat oven to 375°F. Brown the ground beef in a large skillet over medium‑high heat until no longer pink, about 6 to 8 minutes. Drain excess fat, then add onion and cook 3 minutes. Stir in garlic and taco seasoning, cooking 1 minute more.
  2. Remove from heat and stir in the beans, corn, and enchilada sauce. Let cool briefly, then fold in 1 cup of cheese.
  3. Spread a thin layer of the mixture in a greased 9×13‑inch dish. Layer with corn tortillas, tearing to fit, then half the filling. Repeat the layers, finishing with tortillas topped with the remaining sauce and the other cup of cheese.
  4. Bake for 20 to 25 minutes until bubbly. Let rest 5 minutes, then slice and serve with sour cream, avocado, and cilantro.

Notes

If you use an oven‑safe skillet to brown the beef, you can build and bake the whole casserole right in that skillet, saving a dish.
