Mexican Black Beans Recipe

Ingredients
  

  • 2 (15 oz) cans black beans, drained and rinsed
  • 1 tbsp olive oil
  • ½ medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 to 2 chipotle peppers in adobo, minced, plus 1 tbsp adobo sauce
  • ½ tsp dried oregano
  • ¼ tsp salt
  • ⅓ cup water or vegetable broth
  • Juice of ½ lime

Method
 

  1. Heat olive oil in a medium saucepan over medium heat. Add onion and cook 3 minutes until soft; stir in garlic for 30 seconds.
  2. Add cumin, smoked paprika, and oregano; cook 30 seconds, stirring constantly.
  3. Stir in black beans, chipotles, adobo sauce, salt, and water. Simmer uncovered 10 minutes, stirring occasionally, until sauce thickens.
  4. Remove from heat, squeeze in lime juice, and stir. Taste and adjust seasoning. Serve warm.

Notes

If the sauce gets too thick before the beans are as tender as you like, add a splash more water and simmer a minute longer. For a creamy consistency, mash some beans against the side of the pan before serving.
