Method
- Cream the butter and powdered sugar until pale and fluffy, about 2 minutes.
- Mix in the vanilla, flour, cornstarch, and salt until a soft dough forms that holds together when pressed.
- Roll scant tablespoon‑sized balls of dough, place 2 inches apart on parchment‑lined sheets, and make a deep indent in each.
- Fill each indent with about 1/4 teaspoon jam.
- Bake at 350°F (180°C) for 12 to 14 minutes, until edges are set and bottoms are lightly golden. Cool on the tray 5 minutes, transfer to a rack, then dust with icing sugar.
Notes
If the dough becomes too soft to handle, chill it for 10 minutes. For cleaner jam centres, use a piping bag. The biscuits firm up as they cool completely, so handle them gently while warm.
