Ingredients
  

  • 2 (5 oz) cans tuna in olive oil, drained
  • 1 (15 oz) can cannellini beans, drained and rinsed
  • 1 cup halved cherry tomatoes
  • ½ cup pitted Kalamata olives, halved
  • ½ small red onion, very thinly sliced
  • ½ English cucumber, diced
  • ¼ cup chopped fresh parsley
  • ¼ cup crumbled feta cheese
  • 3 tbsp extra-virgin olive oil
  • Juice of 1 lemon (about 3 tbsp)
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1 clove garlic, minced
  • Salt and black pepper

Method
 

  1. Whisk together the olive oil, lemon juice, red wine vinegar, oregano, garlic, salt, and pepper until emulsified.
  2. In a large bowl, combine the tuna, beans, tomatoes, olives, onion, cucumber, and parsley. Flake the tuna with a fork.
  3. Pour the dressing over the salad, toss to coat, scatter the feta on top, and serve.

Notes

For the best flavor, let the salad sit for 10 minutes before serving so the dressing soaks into the beans. Leftovers keep beautifully in the fridge for up to 4 days; just give it a quick stir before eating.
