Mediterranean Steak Bowls Recipe

Ingredients
  

  • 1 lb flank steak
  • 1/4 cup extra-virgin olive oil, divided
  • 2 tbsp fresh lemon juice, divided
  • 2 garlic cloves, minced
  • 1 1/2 tsp dried oregano, divided
  • 1/2 tsp kosher salt, plus more to taste
  • Black pepper
  • 1 cup uncooked Israeli pearl couscous
  • 1 cup water
  • 1 cup cherry tomatoes, halved
  • 1 cup diced English cucumber
  • 1/2 cup thinly sliced red onion
  • 1/2 cup crumbled feta cheese
  • 1/4 cup Kalamata olives, halved

Method
 

  1. Combine 2 tbsp olive oil, 1 tbsp lemon juice, 1 minced garlic clove, 1 tsp oregano, 1/2 tsp salt, and pepper. Coat the steak and set aside.
  2. Bring water to a boil, add couscous, 1 tbsp olive oil, and a pinch of salt. Cover, remove from heat, and steam 8–10 min. Fluff with a fork.
  3. Heat a skillet over high heat. Sear steak 4–5 min per side until medium-rare. Rest 5 min.
  4. Toss tomatoes, cucumber, onion, feta, and olives with remaining 1 tbsp lemon juice, 1 tbsp olive oil, 1/2 tsp oregano, and a pinch of salt.
  5. Slice steak against the grain. Divide couscous, steak, and veggie mixture among bowls. Drizzle with steak juices and serve.

Notes

Let the steak rest fully before slicing, otherwise the juices run out and the meat dries out. Fluff the couscous right after steaming so the grains stay light and separate. This bowl holds up well for meal prep if you keep the components apart until lunchtime.
