Ingredients
  

  • 2 (6-oz) cans salmon, drained and flaked
  • ½ cup panko breadcrumbs
  • 1 large egg, beaten
  • ⅓ cup crumbled feta
  • 3 tbsp chopped kalamata olives
  • 2 tbsp finely chopped sun-dried tomatoes (oil-packed)
  • 2 scallions, thinly sliced
  • 1 tbsp chopped fresh dill
  • Zest of 1 lemon
  • 2 tbsp olive oil
  • ½ cup plain Greek yogurt
  • 1 tbsp fresh lemon juice
  • 1 tbsp chopped fresh dill (for sauce)
  • 1 small garlic clove, grated
  • Pinch of salt

Method
 

  1. Drain and flake the salmon into a bowl, then mix in panko, egg, feta, olives, sun-dried tomatoes, scallions, 1 tbsp dill, and lemon zest.
  2. Shape the mixture into 8 patties about ½ inch thick, chilling them for 10 minutes if you have time.
  3. Heat olive oil in a skillet over medium heat and cook the patties 4 to 5 minutes per side until golden and crisp.
  4. Whisk together the yogurt, lemon juice, 1 tbsp dill, garlic, and salt for the sauce.
  5. Plate the patties and serve with a generous spoonful of the lemon-dill sauce and extra dill.

Notes

If the mixture feels sticky while shaping, wet your hands lightly. The patties firm up as they chill, so even a quick 10-minute rest helps. Leftover patties reheat beautifully in a dry skillet, and the sauce keeps for up to 3 days in the fridge.
