- Drain and flake the salmon into a bowl, then mix in panko, egg, feta, olives, sun-dried tomatoes, scallions, 1 tbsp dill, and lemon zest.
- Shape the mixture into 8 patties about ½ inch thick, chilling them for 10 minutes if you have time.
- Heat olive oil in a skillet over medium heat and cook the patties 4 to 5 minutes per side until golden and crisp.
- Whisk together the yogurt, lemon juice, 1 tbsp dill, garlic, and salt for the sauce.
- Plate the patties and serve with a generous spoonful of the lemon-dill sauce and extra dill.

If the mixture feels sticky while shaping, wet your hands lightly. The patties firm up as they chill, so even a quick 10-minute rest helps. Leftover patties reheat beautifully in a dry skillet, and the sauce keeps for up to 3 days in the fridge.
