- Combine lamb, panko, onion, garlic, egg, parsley, cumin, coriander, oregano, salt, and pepper. Mix gently and shape into about 20 meatballs (1 1/2 inches each).
- Heat the 2 tbsp olive oil in a large skillet over medium‑high heat. Sear meatballs, turning occasionally, until browned and cooked through, 8 to 10 minutes.
- Meanwhile, stir together yogurt, 1/4 cup cucumber, 1 clove garlic, 1 tsp lemon juice, dill, and a pinch of salt for the tzatziki. Whisk 3 tbsp olive oil, 1 tbsp lemon juice, vinegar, 1/2 tsp oregano, salt, and pepper for the vinaigrette.
- Bring broth and 1/4 tsp salt to a boil. Add quinoa, cover, and simmer 15 minutes. Rest 5 minutes off heat, then fluff and stir in 2 tbsp lemon juice, 1 tbsp olive oil, and 2 tbsp parsley.
- Divide quinoa among bowls. Top with meatballs, tomatoes, cucumber, red onion, olives, and feta. Drizzle with vinaigrette and add a spoonful of tzatziki.
Notes
If you’re short on time, use store‑bought tzatziki. The quinoa can be swapped for couscous or brown rice—just adjust the cook time accordingly. Let the meatballs rest for 5 minutes after cooking if you have the time; they reabsorb a bit of juice.
