Mediterranean Garlic Sauce Recipe

Ingredients
  

  • 1 cup garlic cloves (about 4 heads), peeled
  • 1 teaspoon salt
  • 3 cups neutral oil
  • 1/2 cup lemon juice, divided
  • 1 to 2 tablespoons ice water, if needed

Method
 

  1. Place garlic and salt in a food processor; pulse until finely minced, then process to a smooth paste, scraping down the sides as needed.
  2. With the motor running, slowly stream in 3 cups oil, alternating with 1/2 cup lemon juice, a few tablespoons at a time, until the mixture is thick and fluffy. If the sauce breaks, add 1 tablespoon ice water and blend until smooth before continuing.
  3. Spoon the sauce into a jar, swirl the top, and serve or refrigerate. Let it chill for at least an hour for a thicker texture.

Notes

The sauce tastes sharp and garlicky at first. For a mellower flavour, refrigerate overnight before serving. If the sauce seems thin, chilling will help it set.
