Ingredients
  

  • 1/3 cup extra-virgin olive oil
  • 1/4 cup fresh lemon juice
  • 3 garlic cloves, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper (optional)
  • 4 boneless, skinless chicken breasts (about 1 1/2 lbs)

Method
 

  1. Whisk olive oil, lemon juice, garlic, oregano, salt, and pepper in a small bowl until combined.
  2. Place chicken in a dish or zip-top bag, pour marinade over, and coat every piece. Marinate 15 minutes at room temperature or up to 4 hours refrigerated.
  3. Heat a grill pan or skillet over medium-high heat. Cook chicken for 6 to 7 minutes per side until golden and 165°F internally.
  4. Let rest 3 minutes, slice against the grain, and serve with any collected juices.

Notes

Marinating longer than 4 hours with this much lemon can soften the chicken's texture, so 30 minutes to 2 hours is the sweet spot. If your chicken breasts are very thick, pound them to an even thickness before marinating for more consistent cooking.
