Mediterranean Chicken Kabobs Recipe

Ingredients
  

  • 2 lbs boneless skinless chicken thighs, cut into 1 1/2-inch chunks
  • 1/4 cup olive oil
  • 3 tbsp fresh lemon juice
  • 4 cloves garlic, minced
  • 2 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1 red bell pepper, cut into 1-inch squares
  • 1 medium red onion, cut into 1-inch chunks
  • 1 medium zucchini, halved and sliced into half-moons
  • Lemon wedges and tzatziki, for serving

Method
 

  1. Whisk olive oil, lemon juice, garlic, oregano, cumin, salt, pepper, and red pepper flakes in a large bowl. Add chicken pieces, toss to coat, and let sit at room temperature at least 15 minutes.
  2. Soak wooden skewers in water for 30 minutes. Cut bell pepper, onion, and zucchini as directed. Thread chicken and vegetables onto skewers, alternating and leaving space between pieces.
  3. Heat grill to medium-high (about 400°F/200°C). Grill skewers 10 to 12 minutes, turning every 3 to 4 minutes, until chicken reaches 165°F (74°C) and vegetables are charred.
  4. Rest kabobs on a cutting board 5 minutes, then slide chicken and vegetables off skewers onto a platter. Serve with lemon wedges and tzatziki.

Notes

This recipe works beautifully with metal or soaked wooden skewers. Allow an extra 5 minutes for the kabobs to rest before sliding them off, that step is not part of the cook time and makes a big difference in juiciness.
