Method
- Whisk olive oil, lemon juice, garlic, oregano, cumin, salt, pepper, and red pepper flakes in a large bowl. Add chicken pieces, toss to coat, and let sit at room temperature at least 15 minutes.
- Soak wooden skewers in water for 30 minutes. Cut bell pepper, onion, and zucchini as directed. Thread chicken and vegetables onto skewers, alternating and leaving space between pieces.
- Heat grill to medium-high (about 400°F/200°C). Grill skewers 10 to 12 minutes, turning every 3 to 4 minutes, until chicken reaches 165°F (74°C) and vegetables are charred.
- Rest kabobs on a cutting board 5 minutes, then slide chicken and vegetables off skewers onto a platter. Serve with lemon wedges and tzatziki.
Notes
This recipe works beautifully with metal or soaked wooden skewers. Allow an extra 5 minutes for the kabobs to rest before sliding them off, that step is not part of the cook time and makes a big difference in juiciness.
