Mediterranean Baked Cod Recipe

Ingredients
  

  • 4 cod fillets (6 oz each)
  • 2 cups cherry tomatoes, halved
  • 1/2 cup pitted Kalamata olives, halved
  • 3 tbsp capers, drained
  • 1 small shallot, thinly sliced
  • 3 cloves garlic, thinly sliced
  • 3 tbsp extra-virgin olive oil
  • 1 lemon
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • 2 tbsp chopped fresh parsley
  • Salt and black pepper

Method
 

  1. Preheat oven to 400°F (200°C). In a 9x13-inch baking dish, toss tomatoes, olives, capers, shallot, garlic, olive oil, oregano, red pepper flakes, and a pinch of salt and pepper until combined.
  2. Pat cod dry, season with salt, pepper, and lemon zest, then nestle fillets into the tomato mixture.
  3. Squeeze the juice of half the lemon over the fish. Bake 18-22 minutes until cod is opaque and flakes easily.
  4. Let rest 2-3 minutes. Spoon sauce over the fish, top with parsley, and serve with remaining lemon wedges.

Notes

The bake time depends a lot on fillet thickness, so check at the 18-minute mark. If you like a little more color on the tomatoes, run the dish under the broiler for a minute after baking.
