Ingredients

  • 2 tbsp olive oil
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1 (28 oz) can crushed tomatoes
  • 1/2 tsp red pepper flakes
  • 1/4 cup fresh basil leaves, roughly torn
  • 1/2 tsp fine sea salt
  • 1/4 tsp black pepper

Method

  1. Warm olive oil in a skillet over medium heat. Add onion and cook for 6 minutes until soft, then stir in garlic and red pepper flakes and cook 30 seconds.
  2. Pour in crushed tomatoes, stir, and bring to a simmer. Reduce heat to low and cook uncovered for 25 to 30 minutes, stirring occasionally.
  3. Turn off the heat and stir in torn basil, salt, and black pepper. Taste and adjust seasoning.
  4. Spoon sauce over warm meatballs, toss gently, and serve with extra basil and parmesan.

Notes

The sauce tastes even better the next day after the flavors have a chance to meld. If you’re using frozen meatballs, simmer them directly in the sauce for the last 15 minutes of cooking. Cool leftovers before refrigerating.
