Meat Ravioli Filling Recipe

Ingredients
  

  • 1 lb ground meat (½ lb beef, ½ lb pork)
  • 1 tbsp olive oil
  • 1 large egg
  • ⅓ cup freshly grated Parmesan cheese
  • 2 tbsp plain breadcrumbs
  • 1 small garlic clove, minced
  • ¼ tsp ground nutmeg
  • ½ tsp fine sea salt
  • ¼ tsp freshly ground black pepper

Method
 

  1. Heat the olive oil in a large skillet over medium-high heat. Add the ground meat and cook, breaking it up, until browned and no pink remains, 6 to 8 minutes. Stir in the garlic and a pinch of salt; cook 1 minute. Let cool completely.
  2. Transfer the cooled meat to a bowl. Add the egg, Parmesan, breadcrumbs, nutmeg, ½ teaspoon salt, and pepper. Mix until the mixture holds together when squeezed.
  3. Spoon teaspoon-sized mounds of filling onto pasta sheets. Brush edges with water, cover with a second sheet, and press to seal. Cut into individual ravioli and boil or freeze as desired.

Notes

The meat must be completely cool before you add the egg, or the egg will scramble. If the filling feels dry after mixing, work in a tablespoon of water. Make it a day ahead and keep it chilled if you want to speed up assembly day.
