Masala Maggi Recipe

Ingredients
  

  • 2 packs Maggi instant noodles (70g each)
  • 2 tablespoons butter
  • ½ small onion, finely chopped
  • 1 small tomato, finely chopped
  • 1 green chili, slit lengthwise
  • ½ teaspoon ginger-garlic paste
  • ¼ teaspoon turmeric powder
  • ½ teaspoon red chili powder
  • ½ teaspoon coriander powder
  • ¼ teaspoon garam masala
  • Salt, to taste
  • 2 tablespoons chopped fresh coriander

Method
 

  1. Melt the butter in a pan over medium heat. Add the onion and green chili and cook for 2 minutes until soft.
  2. Add the ginger-garlic paste and tomato. Cook for 1 minute until the tomato breaks down.
  3. Stir in the turmeric, chili powder, and coriander powder. Cook for 30 seconds. Pour in 2 cups of water and bring to a boil. Add the noodles and tastemaker sachets, then cook for 3 minutes until the noodles are tender and most of the water is absorbed.
  4. Sprinkle with garam masala and half the coriander. Toss well, divide between bowls, and top with the remaining coriander. Serve immediately.

Notes

This dish is best the minute it is made; the noodles will continue to absorb liquid if they sit. If you need to prep ahead, keep the cooked noodles covered and stir in a splash of hot water just before serving to loosen them up.
